Miller’s Carne Asada Spicy Corn Skillet

Ingredients

  • 1 package Miller’s Carne Asada Sausage, sliced 
  • 1 large bell pepper, chopped 
  • 2 jalapeño peppers, seeded, deveined and diced
  • 2 cups frozen corn
  • 1 cup cherry tomatoes
  • 1/2 tsp. fresh ground black pepper
  • 1 tbsp. extra virgin olive oil
     
Directions
  1. Place a large skillet over high heat, allow pan to warm (about 2-3 minutes).  Place sausage in pan. Cook until browned, stirring occasionally, about 3 minutes.
  2. Remove sausage from skillet. Add olive oil. Add red bell pepper and jalapeno peppers to hot skillet. Toss peppers and cook for 2 minutes until they start to soften slightly. 
  3. Move peppers to the edges of the skillet and pour corn into the center.  Move corn around with spatula to make the layer as thin as possible (so a lot of the corn is touching the skillet).   Allow corn to brown, about 3-5 minutes.
  4. Meanwhile, slice tomatoes into halves. 
  5. Add sausage back to skillet, season with pepper. Stir to combine. Add tomatoes on top and cook until tomatoes are warmed through.
  6. Serve, Enjoy!
