The Beer Cheese ‘n Onions Pretzel Dog

Ingredients

  • 6 Miller’s Beef Franks “The Standard”
  • 6 pretzel buns
  • 3 tbsp. unsalted butter
  • 3 tbsp. all-purpose flour 
  • 2 cloves garlic, grated
  • 1 (12 oz.) bottle beer, preferably lager, at room temperature
  • 1 tbsp. dijon mustard 
  • 1 (8 oz.) block sharp cheddar, grated 
  • 1/4 cup heavy cream 
  • 1 cup sauteed onions 
  • kosher salt
  • black pepper 
  • 1 tbsp. chives, chopped for garnish
     
Directions

Beer Cheese Sauce

  1. Melt the butter in a medium pot over medium heat. 
  2. Whisk in the flour and sauté for 1 minute. 
  3. Stir in the garlic and cook for about 1 minute. 
  4. Whisk in the beer and mustard and cook, stirring, for a few minutes until the mixture begins to simmer and thicken. 
  5. Whisk in the grated cheese a little at a time. Once all the cheese has been added, continue to cook, whisking, until the sauce is smooth and just beginning to bubble, another 5 to 7 minutes. 
  6. Whisk in the heavy cream and season with salt and pepper. Reduce heat to low until ready to serve. 

Hot Dog

  1. Add water to a skillet over medium-high heat, covering surface with half an inch of water
  2. Heat skillet until water starts to boil.
  3. Add hot dogs and roll hot dogs frequently until browned on all sides. 
  4. Remove from pan, serve on pretzel bun and top with sautéed onions, beer cheese and chives. Enjoy!
