Stuffed Anaheim Pepper Dog Bites

  1. Preheat the smoker to 225°F.

  2. Cut the stem side and the tip off of each anaheim pepper. Make an incision lengthwise down one side of the pepper and remove all seeds and insides. Repeat on all peppers.

  3. Split hot dogs down the middle with a knife, lengthwise. Try not to cut all the way through, so the two sides of the hot dog are slightly attached.

  4. Spread cream cheese in the fileted hot dogs and sprinkle with the colby jack cheese.

  5. Place stuffed hot dogs into each pepper and then wrap with strips of bacon. Secure bacon with toothpicks, to ensure the bacon stays around the hot dogs while cooking.

  6. Place on the smoker and cook until bacon browns, approximately 2 hours. 

  7. Let cool for 5 minutes. Remove toothpicks and slice into bite size pieces. Serve with ranch dressing for dipping.
